Cooking Classy (the French Way)

You've probably tried a lot of desserts this summer (despite the fact that it's summer). But, have you tried a raspberry-coconut French macaron? Better yet, have you ever tried making them yourself? A sweet, rose-colored French delicacy. You might be busy this summer but this is one dessert that you won't regret spending some time on!

The ingredients are pretty simple... And definitely worth it.

Raspberry-Coconut French Macarons
For the shell:
  • 120 grams of ground almond flour
  • 228 grams of powdered sugar
  • 2 teaspoons of freeze-dried raspberries, finely ground
  • 140 grams of egg whites
  • 70 grams of granulated sugar
  • pinch of cream of tartar
  • pink gel food coloring
For the filling:
  • 280 grams good white chocolate, chopped
  • 1/2 cup whole-fat coconut milk
  • 1 teaspoon coconut extract or emulsion (optional)

Now, you don't need to go all the way to Paris for those macarons you're dying to have. These macarons are not only pretty to look at but are delicate and refreshing. Have some during brunch with a cup of coffee (or a glass of rosé) and share with your loved ones, or not!
