No matter how you celebrate Christmas, we can all unite in the Holiday Feast that ultimately brings us together. Whether your traditions call for roast meats or poultry, grilled seafood or a platter of veggies, too much food, in anticipation of endless celebration, is always on the menu. Not only can the days following holiday festivities be filled with leftovers, but they're also a time for rest and laziness, especially when it comes to the kitchen. One of my favorite things to do, transforming one meal to another, is to make spaghetti and meatballs. Sound like a lot of work? With this easy recipe you'll be feeling like a pro in no time!
Leftover Meatballs with Spaghetti
1 cup protein, chopped
1 cup veggies, chopped
1 cup starch (rice, potato)
4 cloves garlic
1 cup parsley, chopped
1/2 cup Olive oil, plus more to taste
Good pinch of salt
Parmesan cheese, to taste
Fresh black pepper, to taste
Flour, more or less depending on how wet meatball mix feels (flour will help hold mixture together)
1 box Spaghetti
Cook pasta according to packaging instruction. Rinse with cold water, drain and set aside once cooked to stop the cooking process while you make the meatballs.
In a powerful blender or food processor, throw in whatever protein you have leftover (note, I wouldn't recommend mixing fish with red meat or bird), along with all other ingredients. Blend until smooth (or smoothish). Add flour if necessary.
Spoon out big chunks of meatball mix and form into a ball with palms.
Pan fry meatballs until outsides are crisp and golden on medium-high heat.
Top with spaghetti and toss in a heavy dose of good olive oil.
Finish with Parmesan cheese, fresh cracked black pepper, and fresh chopped parsley.
