I can’t lie, I’ve definitely caved to my cravings and indulged in cake for dinner. Maybe not a sustainable meal, but can be oh so satisfying. For many, as we approach mid-April we come upon the celebration of Easter and the ending of Lent, both in the United States and in France, a time for self-restraint. Though we live an ocean apart, the essential part of this Holiday stays the same wherever you are: a commemoration of family, friends, and sharing community.
This Easter I will eat like the French do and share delicious food with close friends. Growing up we always celebrated Easter for getting the family together at the table for a good meal. At my home I will be serving Slow Dry Roasted Herbed Lamb with Couscous Salad and Sautéed Zucchini Squash. Oh and did I mention cake?
So whether you’re craving cake for dinner or just looking for a quick and impressive dessert, served after a nutritious and filling meal of course, this Chocolate Fondant is magic. And if I may stretch, let us embrace our inner French and celebrate like they do; the word “Pâques” derives from the Latin, “Pascua”, meaning “food” and if you drop the “s” in our “Easter” we can all be “Eater”s this Sunday.
Serve this instead of chocolate eggs and I’m sure you’ll win over the stomachs of even the youngest of guests.
Whip the eggs and sugar with a whisk or electric mixer. Whisk in the melted chocolate and butter then stir in the flour. Pour the thick chocolate batter into individual ramekins.
Bake for 10 minutes at 450 F.
Eat straight out of the oven or with a scoop of ice cream or fresh whipped cream.
