As the Sun sets earlier each day, make this simple dinner; let it stew on the stove as you cozy up by the fire. Relax and enjoy the aromas as they fill your home and then fill the belly, ready for a deep and restful sleep.
1 large leek
2 cups coconut milk
2 large sweet potatoes
1 cup parsley
4 cloves garlic
Salt and fresh black pepper, to taste
Heavily chop all ingredients and place in a large soup pot. Fill pot with water until about 3/4 full, making sure everything is under water. Place on high heat until the water boils then lower to medium heat. Let simmer until potatoes are very tender. Blend soup to smooth. Serve with a good cracking of fresh black pepper, fresh parsley, and a drizzle of good olive oil.
